Tacos and Sides

I decided to detail the recipes from the post I wrote earlier this week.  Making these dishes literally takes no time at all. Many of the ingredients are repeated, but since they are mixed with other various ones, it makes them taste unique in each dish. This might actually be a 30 minute meal!

Lime and Cilantro Sour Cream

Lime and Cilantro Sour Cream

This recipe only calls for 3 ingredients: Sour Cream, Lime, Cilantro. Mix 1/2 cup Sour Cream with juice of 1 lime, and 2 tbsp. cilantro.

Homemade Salsa

For this quick Salsa: cut up 1 or 2 ripe tomatoes (plum, roma, round, etc.. depending on your preference), 1/4 cup red onion, 2 tbsp. cilantro, salt and pepper to taste.

Corn Salad ingredients: 2 ears of corn, 2 ripe tomatoes, 1 avocado, cilantro, juice of 1 lime, salt and pepper. Start by either grilling the corn or boiling it on the stove top. I prefer to grill it, it gives the corn a nice smoky taste. Cut the kernels off of the husk, as shown above.  Cut up the tomato, avocado cilantro. Mix all ingredients in a bowl, toss with lime juice, salt and pepper! Yum.


To prepare the shrimp, just season them with cumin, chili powder, salt and pepper. You can grill them or saute them inside.(My post earlier this week showed me sauteing them because of the rain.) Either way, cook them for a few minutes on each side, until they turn pink – then they are done.  I arranged the shrimp on the tortilla with the salsa, sour cream and shredded lettuce as a garnish.
