Ooey-Gooey Stuffed Cupcakes

3 Oct

This past weekend we celebrated my mom and dad’s birthdays. I was responsible for making the chocolate dessert, for my mom,  and my sister made the key lime pie for my dad. I normally make her a 3 layer chocolate cake, but this year I wanted to switch it up and make something different. I decided on chocolate cupcakes, this recipe is a chocolate lover’s dream. They are decadent and a little bit indulgent, exactly what a birthday should be all about. Oh and the cream cheese and coconut filling adds a nice surprise, but also contributes a complimentary element. I substituted melting chocolates for the chocolate sauce, results were great and perfectly sweet  just like my  MOM!
