Butternut Squash Soup

Hmm, what’s not to love about this soup? It’s easy, flavorful, satisfying and the orange color only adds to the Fall feel of the soup. I basically followed this recipe and made just a few modifications. I used shallots instead of onions and used diced tomatoes instead of canned plum tomatoes . Shallots have a more mild onion taste, making the onion flavor apparent, but not so overpowering as onions can sometimes do. I particularly love the use of sage in this dish. The recipe only calls for a few leaves, but they make a big impact.

    YUM! I love the substitution of the shallots in place of the onions! Will be trying this soon!
